Cheese Muffins
Gina Acosta de Whitley
2 teaspoons baking powder
250 gr all-purpose flour
1/2 teaspoon salt
1/2 teaspoon of ground pepper
40 gr of cheddar cheese grated
3 eggs
8 tablespoons of milk
50 ml of olive oil
100 gr of black olives
1 tablespoon of tarragon
2 tablespoons of chopped flat-leaf parsley
2 tablespoons of dried thyme
100 gr of feta cheese
50 gr of cream cheese
Spray oil for greasing.
Preheat the oven to 350 F
Grease a muffin tin with baking spray.
In a bowl, put the flour, baking powder, salt, pepper, and cheddar cheese, mix very well.
In another bowl, add oil, 6 tablespoons of milk, black olives, Tarragon, parsley, and thyme, integrate well with the mixer.
In another bowl, add feta cheese, cream cheese, and two tablespoons of milk, and whisk, then set aside.
We integrate the dry mixture in three parts into the wet one with the help of the mixer. We transfer the mixture to a piping bag without a tip to facilitate placing it in the muffin tin. We fill each muffin to 1/3 of its capacity, then add a little of the cheese mixture, and finally more mixture.
We bake for 15-20 minutes, let cool a bit, unmold and eat warm.
Enjoy your meal!!
