Pineapple, Ginger, and Mint Water Recipe
Hello! Let's prepare one of my favorite drinks to beat the heat and feel light. This pineapple, ginger, and mint water is a refreshing drink that combines tropical sweetness with a spicy and herbaceous touch, ideal for awakening the palate and aiding digestion without complications.
Preparation time
Organizing yourself in the kitchen is vital to enjoy the process. Here are the estimated times so everything flows without rush:
- Preparation: 15 minutes
- Cooking: 0 minutes
- Total: 15 minutes
- Servings: 4 to 6 glasses
- Difficulty: Easy
Ingredients
To achieve that tropical flavor authentic, the quality of the fruit is non-negotiable. We are going to use fresh products to obtain all the benefits of this natural infusion.
- 1 medium honey pineapple (must be ripe and smell sweet)
- 1 piece of fresh ginger (approximately 3 to 4 cm)
- 1 generous sprig of fresh mint (leaves only)
- 1.5 liters of cold water (you can adjust according to desired intensity)
- Ice to taste
- Sweetener to taste (sugar, honey or stevia) (Optional)
- 1 lemon (juice only, to balance acidity) (Optional)
For decorating
- Thin lemon slices or pineapple triangles
- Extra mint leaves
If you can't find fresh pineapple at its best, you can use frozen pineapple, although the flavor will be slightly less intense. If you don't have fresh mint, spearmint is an excellent substitute that maintains that herbaceous freshness. If you're looking for inspiration to use the rest of your pineapple in savory dishes, some pork and pineapple skewers are a wonderful option.
Utensils we will use
We don't need sophisticated equipment; the basics from home are enough to get a perfect texture.
- Blender
- Large chef's knife (well-sharpened)
- Stable cutting board
- Fine mesh strainer (if you prefer the water without fiber)
- Large glass pitcher
- Long stirring spoon
- Manual juicer (if using lemon)
Preparation
- Cleaning and peeling the pineapple.
Place the pineapple on the board. Cut off the base and crown for stability. With the knife, remove the skin from top to bottom, making sure to remove the brown «eyes,» as they can be bothersome when drinking. If the pineapple is very large and you have leftovers, you can save it to make a pineapple and cucumber gazpacho later. - Cutting the fruit.
Cut the pineapple into medium cubes (approx. 3 cm). The pineapple core is fibrous but contains a lot of bromelain; you can include it if you have a powerful blender and plan to strain the mixture, otherwise, remove it for a smoother texture. - Ginger preparation.
Peel the ginger by scraping the skin with the edge of a spoon (it's easier than with a knife and you waste less). Cut it into thin slices or grate it to facilitate blending and better release its spicy and digestive. - Base blend.
Place the pineapple cubes and ginger in the blender. Add approximately 2 cups of cold water. Blend at high speed until you get a very liquid and homogeneous puree. We aim to break down the fibers well. - Incorporating the mint.
Here's the trick: add the washed mint leaves to the blender jar and pulse only 2 or 3 times (low speed) or blend for 2 seconds. We don't want to completely crush the mint, because if it oxidizes too much, the drink will take on a dark color and a bitter taste. We just want it to release its essential oils. - Final mix.
Pour the concentrate into the large pitcher. If you prefer a light «spa-like» water, pass the mixture through a fine-mesh strainer, pressing with a spoon to extract all the juice. If you like fiber, pour it directly. Add the rest of the cold water and lemon juice if you decide to use it. - Sweetness adjustment.
Taste the mixture. Honey pineapple is usually very sweet, but if needed, dissolve your preferred sweetener. Remember that when adding ice, the sweetness will be perceived less, so leave it a point above what is desired.
To finish and serve
Add plenty of ice to the pitcher just before bringing it to the table to ensure a hydration immediate refreshing. Stir well with a long spoon to unify the temperature. Serve in tall glasses, decorating each with a pineapple slice on the rim and an «awakened» mint leaf (gently patting it against your hand to release aroma). This drink is ideal to accompany fresh meals, such as some chicken and chipotle lettuce tacos, balancing the spiciness of the dish with the freshness of the pineapple.
Nutritional Information
This drink is low in calories and rich in natural enzymes. Here are the estimated values per glass (without added sugar):
- Calories: 65 kcal
- Proteins: 0.5 g
- Fats: 0.1 g
- Carbohydrates: 16 g
- Fiber: 1.5 g (if not strained)
Note: Values are approximate and may vary depending on the size of the fruit and whether you decide to strain the fiber or add extra sweeteners.
5 keys to make it perfect
Preparing flavored water seems simple, but the details make the difference between a common juice and a memorable experience. Here I share my secrets:
- Maturity is key: Use a pineapple that is golden on the outside. If it's green, it will be acidic and you'll have to use a lot of sugar to compensate, losing the healthy aspect of the recipe.
- Be careful with ginger: It's a potent ingredient. Start with less if you're not used to it. You can always add more ginger juice (grating and squeezing separately) at the end, but you can't remove it once blended. If you like this spicy touch, you'll also love trying our version of pineapple and ginger agua fresca more concentrated.
- Fresh mint, not oxidized: As I mentioned in the preparation, avoid over-blending the mint. Another option is to «bruise» the mint: put it in the pitcher and gently muddle it with a mortar and pestle or wooden spoon before pouring the liquid, mojito style, instead of blending it.
- Serve immediately: Pineapple oxidizes and separates from the water over time. If you let it sit for too long, you'll have to stir it constantly. Additionally, vitamin C degrades with light and air.
- Flavored ice cubes: If you are going to have the pitcher out of the fridge for a while (for example at a party), make ice cubes with coconut water or with pineapple pieces inside. This way, when they melt, they won't water down your drink, but rather add more flavor.
When is it ideal to enjoy it?
This pineapple water it is extremely versatile. Due to its properties, it is perfect to accompany hearty or protein-rich meals, as the bromelain from pineapple and ginger greatly facilitate the stomach process. Imagine it served alongside a al pastor turkey with roasted pineapple; the flavors complement each other wonderfully.
It is also the star on summer afternoons or after exercising, as it functions as a natural serum thanks to the fruit's potassium. However, avoid drinking it too late at night if ginger tends to activate you too much or cause acidity, although for most it is a digestive balm. It is a sophisticated alternative to industrial sodas at family gatherings.

Culinary glossary
To help you move like a fish in water in the kitchen, here are some terms we used today:
- Bromelain: Enzyme present in fresh pineapple that helps break down proteins, facilitating digestion and tenderizing meats.
- Cold infusion: Process of extracting flavor from herbs or fruits by letting them steep in liquid (water) without applying heat, preserving delicate flavors.
- Macerate: To gently crush or bruise an ingredient (like mint) to release its juices and essential oils without mashing it.
- Pineapple eyes: Small brown, hard spots that remain in the pineapple flesh after removing the peel; they should be removed due to their unpleasant texture.
- Seasoning point: The moment when the flavor is perfectly balanced, in this case, the balance between the sweetness of the fruit, the acidity, and the spiciness.
