Ingredients for Chicken Stir-Fry

  • 1/4 cup chicken broth
  • 2 teaspoons cornstarch
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons muscovado sugar
  • 1 teaspoon sherry liquor (optional)
  • 2 tablespoons peanut oil
  • 1 tablespoon rice vinegar
  • 3 tablespoons green onion, sliced
  • 2 cloves garlic, chopped
  • 2 tablespoons grated ginger
  • 1/2 teaspoon ground chile de árbol
  • 500 g chicken breast, cubed
  • 2 cups broccoli florets
  • 1 cup carrot, cut into strips
  • 1/4 cup of red bell pepper, cut into strips
  • 1/2 cup green beans
  • 1/2 cup water chestnut, sliced

Preparation of the Sauce and Chicken Stir-Fry

  1. In a bowl, whisk together the chicken broth, cornstarch, soy sauce, hoisin sauce, brown sugar, sherry wine, and rice vinegar. Let the mixture rest while you prepare the chicken and vegetables.
  2. Heat the peanut oil in a wok over high heat until very hot.
  3. Add the spring onions, garlic, ginger, and chile de árbol, sautéing for approximately 15 seconds to release the flavors.
  4. Add the chicken cubes to the wok and cook until they are well cooked and have changed color.
  5. Incorporate the vegetables: broccoli, carrot, red bell pepper, green bean, and water chestnuts. Sauté until the vegetables are tender-crisp.
  6. Pour the prepared sauce and continue cooking for about 2 minutes, or until the sauce thickens a little.
  7. Serve hot, accompanied by rice noodles or white rice.
