Ingredients for the Yeast Dough

  • 1 1/2 teaspoon of dry yeast
  • 1/4 cup warm milk
  • 3 cups bread flour
  • 1/3 cup sugar
  • A pinch of salt
  • 1 1/2 teaspoons vanilla
  • 1/2 cup egg (approximately 2 eggs)
  • 100 g of butter

Ingredients for the Cinnamon Roll

  • 75 g dark brown sugar
  • 12 g cinnamon
  • 60 g butter
  • 50 g raisins

Ingredients for the Glaze

  • 100 g dark brown sugar
  • 35 g butter
  • 35 g corn syrup
  • 35 g honey
  • 25 ml water
  • 20-25 walnut halves

Preparation of the Yeast Dough

  1. Dissolve the yeast in the warm milk and let it rest for 5 minutes.
  2. In the mixer bowl, mix the flour, sugar, salt, and vanilla. Add the egg and dissolved yeast, beating gently.
  3. Incorporate the softened butter in 4 or 5 parts, allowing the dough to absorb each addition before adding more.
  4. Knead until an elastic and smooth mixture is achieved.
  5. Cover a container with plastic wrap and let the dough rest in a warm place for approximately 1 and a half hours, or until it doubles in size.

Shaping the Cinnamon Rolls

  1. Once the dough has risen, “punch down” the dough by pressing with your fingers to release the accumulated gas.
  2. Roll out the dough with a rolling pin, forming a rectangle, and set aside for the cinnamon filling.

Preparation of the Cinnamon Filling

  1. Mix by hand the muscovado sugar, cinnamon, and butter until a homogeneous paste is achieved.
  2. Spread this mixture over the dough rectangle and sprinkle the raisins evenly on top.
  3. Roll the dough from one end to the other and cut into 9 equal parts.

Baking and Glazing

  1. Line a 9” springform pan with parchment paper.
  2. Prepare the glaze by mixing all ingredients (except the walnuts) in a bowl, whisking with a balloon whisk until a uniform mixture is obtained.
  3. Pour the glaze mixture into the pan and add the walnut halves on top.
  4. Place the cinnamon rolls in the pan, allowing them to rise again for 1 hour.
  5. Preheat the oven to 350°F (175°C) and bake for 25 to 30 minutes, or until golden brown.
  6. Invert immediately upon removing from the oven so that the glaze adheres well to the rolls.

Chef's Recommendations to Enhance the Flavor

  • Use fresh ingredients, such as powdered spices and butter, to enhance the overall flavor.
  • Try adding pieces of walnut or almond to the filling for a crunchy touch and additional flavor.
  • Allow the cinnamon rolls to cool completely before applying the glaze for a better texture.
  • Experiment by varying the proportion of brown and white sugar in the glaze to adjust the sweetness to your liking.
