Ingredients

For the risotto

  • ½ tablespoon of olive oil
  • ¼ white or yellow onion, finely chopped
  • 1 large sweet potato, peeled and cut into 1.5 cm cubes
  • 1 tablespoon of minced garlic
  • ½ cup steel cut oats
  • 1 cup chopped spinach
  • 3 cups vegetable broth
  • ¼ cup grated Parmesan cheese
  • ½ tablespoon of butter
  • Yellow lemon juice for serving
  • Salt and pepper to taste

If at any time you don't find steel cut oats, you can substitute it with arborio rice for risotto. Keep in mind that cooking time varies and more liquid will be needed.

2. Cooking with broth

3. Finish the risotto
