Ingredients for Gobernador Tacos
- 1 kg peeled and chopped shrimp

- 2 green bell peppers
- 1 red bell pepper
- ½ onion
- 1 large tomato
- 1 tablespoon shrimp bouillon
- 1 tablespoon of oregano
- ¼ cup chopped cilantro
- 1 cup grated Manchego, Chihuahua, or Oaxaca cheese
- ½ kg of corn tortillas
Method of Preparation
- In a large skillet, add a drizzle of olive oil and heat it over medium heat.
- Add the chopped onion, bell peppers, and minced garlic cloves. Sauté until the vegetables are softened.
- Incorporate the chopped shrimp along with the oregano. Cook until the shrimp change color.
- Add the chopped tomato, the shrimp broth, and the chopped cilantro. Cook for a few minutes until everything is well integrated.
- Once cooked, add the grated cheese and cover the pan so the cheese melts.
- Heat the tortillas in a pan with a little cooking spray so they stay soft.
- Fill the tortillas with the shrimp and vegetable mixture, assemble your tacos and you're done!
