Ingredients: 600 g clean skirt steak; 1/4 cup orange juice; 1 tbsp lemon juice; 1 tsp cumin; 1 tsp salt; 1/4 tsp pepper; 1 tbsp vegetable oil; 12 corn tortillas; 1 cup cambray onions; 1/4 cup chopped cilantro. Preparation: Marinate: 1. Mix orange juice, lemon, cumin, salt, and pepper. 2. Rub the meat and let rest for 30 minutes. Sear: 1. Heat a very hot pan with oil. 2. Sear the meat 3–4 minutes per side. 3. Let rest for 5 minutes before cutting. Onions: 1. In the same pan, sauté the onions until golden. Assembly: Serve the meat in strips on hot tortillas, add onions and cilantro.
