- 1/4 cup mayonnaise
- 1/4 cup of Greek yogurt
- 1 1/2 tablespoon of honey
- 1 1/2 tablespoon of apple cider vinegar
- 1 tablespoon of honey
- 1 tablespoon of lemon zest
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon of curry
Step-by-step preparation
We prepare the chicken
Paso 1. We shred the roasted chicken into medium pieces and place it in a large bowl where we can comfortably mix all the ingredients.
We toast the almonds
Paso 2. We place the sliced almonds in a dry pan over medium-low heat.
Paso 3. We toast them lightly, moving them constantly so they brown evenly without burning. As soon as they start to color and release their aroma, we remove them from the heat and let them cool.
We combine the salad
Paso 4. To the bowl with the chicken, we add the toasted almonds, dried cranberries, diced apple, green onion, green grapes, celery and Italian parsley.
Paso 5. We mix gently to distribute all the ingredients. Here we already begin to have that combination of colors and textures that makes this salad so special.
We prepare the dressing
Paso 6. In another bowl, we place the mayonnaise, Greek yogurt, honey, apple cider vinegar, honey, lemon zest, lemon juice, salt, pepper and curry.
