Ingredients

For the cake

  • 200 g of wheat flour
  • 150 g of granulated sugar
  • 3 large eggs
  • 100 ml of vegetable oil
  • 120 ml of milk
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 tablespoon of edible dried lavender flowers
  • 150 g of fresh blueberries

For the lavender syrup

  • 100 ml water
  • 80 g of sugar
  • 1 teaspoon of edible dried lavender flowers

For the frosting (optional)

  • 150 g of cream cheese
  • 100 g of powdered sugar
  • 1 teaspoon of vanilla extract

If you can't find edible lavender, you can substitute it with a small amount of vanilla extract to maintain a soft floral aroma without it being invasive.

Utensils we will use

  • Small frying pan or saucepan (for the syrup)
  • Bowl for mixing the dough
  • Hand or electric mixer
  • Silicone spatula
  • 20 cm round cake pan (you can use a tart pan or a similar dish)
  • Knife for cleaning blueberries
  • Sieve for sifting flour

Preparation

1. Prepare the lavender syrup

  1. Mix ingredients: In the small saucepan, combine the water, sugar, and lavender flowers.
  2. Boil: Bring to a boil over medium heat, stirring until the sugar is completely dissolved.
  3. Infusion: Let the mixture simmer gently for 3 minutes for the lavender to release its aroma.
  4. Cool and strain: Remove from heat and let cool. Then strain to remove the flowers. Set aside.

2. Make the cake batter

  1. Wash and prepare blueberries: Gently wash the blueberries and dry them with paper towels.
  2. Dry mixture: Sift the flour with the baking powder and salt into the large bowl.
  3. Beat eggs and sugar: In another bowl, beat the eggs with the sugar until the mixture is creamy and light.
  4. Add oil and milk: Incorporate the oil and milk into the beaten eggs, mixing well.
  5. Add lavender: Add the dried lavender flowers to the liquid mixture and stir gently to distribute.
  6. Incorporate dry ingredients: Pour the flour mixture into the liquid mixture and mix with a spatula until integrated without overbeating.
  7. Add blueberries: Reserve some for decoration and mix the rest into the batter carefully so as not to break them.

3. Bake

  3. Bake at a constant temperature: Place in the preheated oven at 180ºC (350°F) for approximately 45 minutes or until a toothpick inserted comes out clean.

4. To finish and serve
