This recipe for Creamy Curry, Coconut, and Lemon Shrimp with Jasmine Rice combines shrimp in a creamy curry, coconut, and lemon sauce over jasmine rice. It's a delicious option to prepare at home and share at a special meal without overcomplicating things.

Ingredients

For the shrimp

  • 800 g large shrimp, peeled and deveined
  • 1 cucharadita de sal de grano
  • ½ cucharadita de pimienta negra recién molida
  • 1 teaspoon of paprika
  • 2 tablespoons coconut oil or vegetable oil

For the sauce

  • 1 tablespoon of butter
  • ½ white onion, finely chopped
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons yellow curry paste
  • 1 can (400 ml) full-fat coconut milk
  • ½ cup chicken or seafood broth
  • 1 tablespoon honey
  • 1 tablespoon fish sauce (optional, but highly recommended)
  • Juice and zest of 1 yellow lemon
  • ½ cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped

To accompany

  • 2 tazas de arroz jazmín cocido
  • Lemon wedges
  • Fresh cilantro
  • Toasted sesame seeds (optional)

Step-by-step preparation

Step 1: Prepare the shrimp

  1. Pat the shrimp very dry with paper towels.
  2. Season them with salt, pepper, and paprika.
  3. Heat a large skillet over medium-high heat with the coconut oil.
  4. Cook the shrimp for 1½ to 2 minutes per side, just until they change color.
  5. Remove them immediately and set aside. Do not overcook them so they remain juicy.

Step 2: Prepare the sauce base

  1. In the same skillet, melt the butter.
  2. Add the onion and cook until translucent.
  3. Add the garlic and ginger. Cook one more minute.
  4. Stir in the curry paste and cook for another minute, stirring constantly to release all its aroma.

Step 3: Prepare the sauce

  1. Pour in the coconut milk and broth.
  2. Mix perfectly until combined.
  3. Add the honey and fish sauce.
  4. Simmer gently for 5 minutes, until the sauce thickens slightly.
  5. Stir in the cherry tomatoes.
  6. Add the lemon juice and zest.
  7. Rectifica la sazón.

Step 4: Combine

  1. Return the shrimp to the skillet.
  2. Cook for only 2 more minutes, just enough to heat them through without overcooking.
  3. Add the fresh cilantro just before turning off the heat.

Paso 5: Presentación

  1. Serve over a bed of jasmine rice.
  2. Coloca encima los camarones.

  4. Garnish with fresh cilantro, toasted sesame seeds, and a lemon wedge.
