Pollo Cremoso con Burrata, Limón y Albahaca

For the chicken
- 4 large chicken breasts, butterflied

- 2 tablespoons extra virgin olive oil
- 1 tablespoon of unsalted butter
For the sauce
- 3 cloves of garlic, finely chopped
- 1 cup dry white wine
- 1 cup of chicken broth
- ¾ cup heavy cream
- 1 limón amarillo (ralladura y jugo)
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh basil leaves
- 1 teaspoon Dijon mustard
- Salt and pepper to taste

Step-by-step preparation
Step 1: Prepare the chicken
- Pat the chicken breasts perfectly dry with paper towels. This step helps them brown better and prevents them from boiling instead of searing.
- Season both sides with salt, pepper, garlic powder, and paprika, making sure to distribute the seasonings evenly.
- Let the chicken rest for 15 minutes at room temperature so that it cooks evenly.
Step 2: Sear
- Heat a large, heavy-bottomed skillet over medium-high heat.
- Add the olive oil and butter.
- When the butter stops foaming, add the chicken breasts.
- Do not move them during the first 4 or 5 minutes. This will allow a golden crust full of flavor to develop.
- Flip and cook for another 4 minutes.
- Remove the chicken and set aside on a plate.
Step 3: Prepare the sauce
- In the same skillet, add the garlic.
- Cook for only 30 seconds, stirring constantly to prevent it from burning.
- Add the white wine.
- With a wooden spoon, scrape up all the small golden bits from the bottom of the skillet; that's where much of the flavor is.
- Let it reduce by about half.
- Add the chicken broth.
- Reduce again for about 5 minutes.
- Add the cream, Dijon mustard, lemon zest, and lemon juice.

Step 4: Finish cooking
- Return the chicken breasts to the skillet.

- Cook for another 5 to 7 minutes until the chicken reaches an internal temperature of 74 °C.
- Turn off the heat.
- Add the fresh basil.
Step 5: Assembly
- Serve one chicken breast on each plate.
- Place half a burrata on top of each.
- The heat from the chicken will slowly begin to soften the cheese.
- Finish with:
- fresh lemon zest,
- basil leaves,
- a little more black pepper,
- a few drops of extra virgin olive oil.
- When cutting the burrata, the creaminess will mix with the sauce forming a very creamy presentation.
