Ingredients

- 1 cup of halved strawberries
- 1 cup of raspberries
- 1 cup of blackberries
- ½ cup of blueberries
- Fresh mint leaves

Step-by-step preparation
Step 1: Prepare the oven
- Preheat the oven to 120 °C.
- Place parchment paper on a baking sheet and draw a circle of approximately 22 cm as a guide.
- Flip the paper so the ink does not touch the meringue.
Step 2: Prepare the meringue
- Place the egg whites in the completely clean and dry bowl of the mixer.
- Start beating at medium speed until soft peaks form.
- Add the sugar little by little, one tablespoon at a time, without stopping beating. This step is fundamental to obtain a smooth and shiny texture.
- When the meringue forms firm peaks and the sugar has completely dissolved, incorporate the cornstarch, vinegar, vanilla, and salt.
- Beat for only a few more seconds to integrate.
Step 3: Form the pavlova
- Place the meringue on the marked circle.
- With a spatula, form a high disk and create a slight hollow in the center, where the cream will go later.
- It is not necessary for it to be perfectly smooth; the undulations give it its artisanal look.
Step 4: Bake
- Bake for 1 hour and 20 minutes.
- Turn off the oven and do not open the door.
- Let the pavlova cool completely inside the oven for at least 2 hours, or preferably overnight. This prevents it from cracking due to the sudden change in temperature.

- Beat the whipping cream until soft peaks form.
- In another bowl, mix the mascarpone with the powdered sugar, vanilla, and lemon zest.

Step 6: Decorate
- Place the cream on the center of the pavlova.
- Distribute the red berries naturally, alternating colors and sizes.
