Ingredients
For the milanesas
- 4 thin chicken breasts (approximately 180 g each)
- 120 g of brie cheese without the top rind
- 80 g of fig jam
- 1 teaspoon salt
- ½ teaspoon black pepper
For breading
- 120 g wheat flour
- 2 large eggs
- 180 g of panko
- 50 g grated Parmesan cheese
- 1 teaspoon of garlic powder
- 1 teaspoon of dried parsley
For frying
- Enough oil
For decorating
- Fresh arugula
- Balsamic reduction
- Parmesan cheese in slices
Procedure
Open the chicken breasts
With a sharp knife, make a lateral cut forming a pocket.
Do not cut completely through the chicken breast.
The idea is to create space for the filling.
Season with salt and pepper inside and out.
2. Prepare the filling
Cut the brie cheese into slices.
Insert into each chicken breast:
- A portion of brie cheese
- A tablespoon of fig jam
Do not overfill.
If you place too much filling, it can escape during cooking.
Close with toothpicks.
Prepare the breading
In a plate, place the flour.
In another, beat the eggs.
In a third, mix:
- Panko
- Parmesano
- Garlic powder
- Parsley
This breading turns out incredibly crispy.
Bread
Pass each chicken breast through:
Flour
Egg
Panko mixture
Press gently so that the breading adheres.
Place on a tray.
Refrigerate for 20 minutes.
This step helps prevent the breading from detaching.
5. Freír
Heat oil to 175°C.
Fry the chicken breasts for approximately 4 minutes per side.
Look for an even golden brown.
Retira.
Place on a rack.
Finish in the oven
Preheat the oven to 180°C.
Bake the milanesas for 8 minutes.
This way you ensure that the center is perfectly cooked and the cheese is completely melted.
Remove the toothpicks before serving.
Assembly
Place a light bed of arugula.
Place the diagonally cut milanesa on top.
Leave the melted cheese visible.
Finish with:
- Drizzles of balsamic reduction
- Parmesan slices
- A little freshly ground pepper
