For the Brie

- 2 tablespoons pecans, lightly toasted and chopped
For the peaches
- 2 firm peaches, cut into wedges
- 1 tablespoon of unsalted butter
- 1 tablespoon muscovado sugar
- 1 pinch of cinnamon
- 1 pinch of salt
To accompany
- Slices of toasted baguette
- Crostini-style crackers
- Green apple in slices
- Fresh grapes
- Sprigs of fresh rosemary or thyme
Step-by-step preparation
Step 1: Prepare the spicy honey
- Place the honey in a small saucepan.
- Add the dried chili flakes and fresh thyme.
- Heat over very low heat for 2 minutes.
- Remove from heat and let rest so the honey infuses with the chili and thyme.
Step 2: Caramelize the peaches
- Melt the butter in a skillet over medium heat.
- Add the peaches cut into wedges.
- Sprinkle the brown sugar, cinnamon, and a pinch of salt.
- Cook for 2 to 3 minutes per side.
- Remove from heat when the peaches begin to caramelize, but still retain their shape.
- Set aside while you bake the Brie cheese.
Step 3: Bake the Brie
- Preheat the oven to 180 °C.
- Place the Brie cheese wheel in a small baking dish or cast iron skillet.
- With a knife, make shallow diamond-shaped cuts on the cheese rind, without cutting all the way through.
- Bake for 12 to 15 minutes.
- Remove from the oven when the inside of the Brie is completely soft and creamy.
Step 4: Assemble the presentation
- Transfer the hot Brie to a platter.
- Arrange the caramelized peaches on top and around the cheese.
- Drizzle with the infused spicy honey.
- Sprinkle the chopped pistachios and toasted pecans.
