Tropical Carrot Cake – Celebrating with Flavor and Joy

There's no better day to bake than on a birthday. This Sunday is my husband's birthday, and today some surprises are being celebrated at the office. When he requested that they not buy him a cake because he would bring one made by his wife, that brought with it a great commitment: expectations are high and I hope not to disappoint those who try it. Generally, for his birthday I always make cake of three milks, but this year he asked for a delicious carrot cake.

The Tropical Carrot Cake is an exquisite option, perfect for festivities and celebrations. The blend of tropical flavors, such as pineapple and coconut, complemented by the characteristic taste of carrots, results in a unique and comforting dessert. It is a cake full of history and flavor, ideal for sharing with family and surprising your guests.

As you may recall, carrot is a versatile ingredient that provides not only a sweet touch, but also great nutritional value. In every bite of this delicious cake, you can enjoy the fusion of flavors that makes this dessert not only a delight, but also a celebration of home cooking.

Ingredients for the Tropical Carrot Cake

  • 2 1/3 cups sifted flour
  • 1 cup shredded coconut
  • 1 cup walnuts
  • 3/4 teaspoon crystallized ginger
  • 3 1/2 teaspoons ground cinnamon
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups of sugar
  • 1 cup of vegetable oil
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 cups finely peeled and grated carrot
  • 2 (8 oz) cans crushed pineapple, well drained

Ingredients for the Frosting

  • 3 packages of cream cheese Philadelphia (8 oz each)
  • 3/4 cup butter
  • 2 cups powdered sugar
  • 3/4 cup coconut cream
  • 1 teaspoon vanilla
  • 1/2 teaspoon coconut extract
  • For decorating: ground walnuts

Instructions for Preparing the Tropical Carrot Cake

Let's start preparing this delicious recipe that will surely captivate everyone at the celebration:

  1. Preheat the oven: Heat the oven to 350°F (175°C).
  2. Prepare the walnut and coconut mixture: Combine 1/3 cup of flour in the food processor with the ginger, coconut, and walnuts. Process until the walnuts are finely chopped (without becoming powder).
  3. Sift the dry ingredients: In a large bowl, sift the remaining flour, cinnamon, baking powder, and salt. This will ensure the mixture is light and airy.
  4. Mix the wet ingredients: In an electric mixer, mix the sugar with the oil. Add the eggs one by one, incorporating each egg well before adding the next. Then, add the vanilla.
  5. Incorporate dry ingredients: Add the dry ingredient mixture along with the walnut and coconut mixture to the mixer bowl. Mix until well integrated.
  6. Add carrots and pineapple: Once the batter is well combined, add the grated carrot and well-drained pineapple. Mix gently until incorporated.
  7. Bake: Divide the mixture equally into three molds of the same size. Bake for approximately 30 minutes or until a toothpick inserted comes out clean. Once baked, let the cakes cool in the molds for a few minutes before unmolding.

Preparation of the Cream Cheese Frosting

While the cakes cool, it's time to prepare the frosting:

  1. Beat the ingredients: In a bowl, beat the cream cheese and butter until creamy. This should be done at medium speed.
  2. Add sugar and flavorings: Add the powdered sugar, coconut cream, vanilla, and coconut extract. Beat until everything is well combined and creamy.
  3. Refrigerate: Place the frosting in the refrigerator for at least an hour to achieve a better texture.

Assemble and Decorate the Cake

Once you have the cooled cakes and the frosting ready, it's time to assemble your creation:

  1. Assemble the cake: Place one of the cakes on a platter. Apply a layer of frosting on top, then place the second cake on top and repeat the process. Finally, add the third cake on top and completely frost the cake.
  2. Decorate: Decorate the cake with ground walnuts and caramelized carrots (see recipe below). You can also add white chocolate shredded around and golden sprinkles for a festive touch.

And don't forget the caramelized carrot decoration using the flowers you made with the vegetable sharpener. Here's how to make them.

Caramelized Carrot Recipe

To make the caramelized carrot, you will need:

  • 2 carrots
  • 1 cup of water
  • 1 cup of sugar

These are the steps to caramelize them:

  1. Prepare the slices: With a peeler, make thin slices of the carrots and place them on a baking sheet with parchment paper.
  2. Cooking: Heat water with sugar until it boils. Once it's bubbling, gradually add the carrot slices. Let boil for 5 minutes.
  3. Dry and shape: Remove the carrots from the water and place them back on the baking sheet with parchment paper. Bake at 400°F (200°C) for approximately 6 minutes. Then, remove and quickly shape them with a toothpick as they cool.

With this, you will have a spectacular decoration for your tropical carrot cake.

Chef's Tips for a Perfect Cake

  • Use fresh ingredients: Make sure the carrots and pineapple are fresh for the best flavor.
  • For an even moister texture, add a little applesauce along with the wet ingredients.
  • If you want a more intimate flavor, add a pinch of nutmeg along with the cinnamon.
  • Refrigerate the cake before serving so that the frosting stays firm and is easier to cut.
  • This cake can be made in advance. Simply assemble and decorate a day before and refrigerate.
