Korean Style Pork Ribs with Silky Mashed Potatoes

This recipe for Korean Style Pork Ribs with Silky Mashed Potatoes is ideal for a flavorful home meal. The meat is tender, well seasoned, and accompanied by a sauce or side dish that makes it perfect for sharing.

Ingredients

Para las costillas

  • 5 kg of pork ribs (Baby Back Ribs or St. Louis)
  • 2 teaspoons of salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons of sesame oil

For the Korean BBQ sauce

  • ½ cup (120 ml) of low sodium soy sauce
  • ⅓ cup (110 g) of honey
  • ¼ cup (60 g) of muscovado sugar
  • 3 tablespoons of gochujang paste
  • 2 tablespoons of gochugaru paste (optional for a more authentic flavor)
  • 2 cucharadas de vinagre de arroz
  • 2 tablespoons of mirin
  • 1 tablespoon of toasted sesame oil
  • 8 cloves of finely grated garlic
  • 2 cucharadas de jengibre fresco rallado
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of Worcestershire sauce
  • 1 cucharadita de pimienta negra

For the silky mashed potatoes

  • 2 kg of Yukon Gold potatoes or white potatoes
  • 120 g of butter
  • 250 ml of hot heavy cream
  • ½ cup (50 g) of finely grated Parmesan cheese
  • Salt to taste
  • White pepper to taste

For decorating

  • Toasted white sesame seeds
  • Ajonjolí negro
  • Finely chopped chives
  • Fresh cilantro (optional)
  • Slices of fresh red chili

Step-by-step preparation

Step 1: Prepare the ribs

  1. Remove the membrane found on the back of the ribs.
  2. Insert a knife through a corner.
  3. Pull with the help of a paper towel.
  4. Removing it completely will make it easier for the meat to absorb the flavors better and it will be much more tender.
  5. Perfectly dry the ribs.
  6. Mix the salt, pepper, garlic powder, onion powder, and paprika.

Step 2: Slow cooking

  2. Cook over medium heat.

Step 4: Prepare the purée

  1. Peel the potatoes.
  2. Cut them into similar pieces.
  3. Boil them in water with enough salt until they are completely soft.
  4. Drain them very well.
  5. Pass them through a potato ricer or a fine sieve.
  6. Add the butter while they are still hot.
  7. Then gradually incorporate the hot cream.
  8. Add the Parmesan.
  9. Mix only until incorporated.
  10. Season with salt and white pepper.
  11. It should be extremely silky.

Step 5: Glaze the ribs

  1. Remove the ribs from the oven.
  2. Carefully open the foil.
  3. Drain the excess liquid.
  4. Generously brush the entire surface with the Korean BBQ sauce.
  5. Raise the oven temperature to 220 °C.
