This recipe for Pistachio, White Chocolate, and Brown Butter Blondies combines soft squares of pistachio and white chocolate with brown butter. It's a rich option to prepare at home and share at a special meal without overcomplicating it.

Ingredients

For the blondies

  • 225 g unsalted butter
  • 1½ cups brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla paste or extract
  • 2½ cups of wheat flour
  • 1 teaspoon of baking powder
  • ½ teaspoon fine salt
  • 200 g good quality white chocolate, chopped into pieces
  • 1 cup natural pistachios, lightly toasted and chopped
  • ¼ cup pistachio paste (optional, but highly recommended)

For decorating

  • ½ cup melted white chocolate
  • ¼ cup chopped pistachios
  • Flaky sea salt
  • Edible rose petals (optional)

Step-by-step preparation

Step 1: Prepare the brown butter

  1. Place the butter in a saucepan over medium heat.
  2. Let it melt without stirring too much.
  3. First it will foam, and then small golden specks will begin to appear at the bottom.
  4. When it gives off an aroma similar to toasted hazelnuts and has a light amber color, remove it immediately from the heat.
  5. Transfer it to another container to stop the cooking.
  6. Let it cool for 15 minutes.

Step 2: Prepare the mixture

  1. Preheat the oven to 180 °C.
  2. Line a 23 x 23 cm square pan with parchment paper.
  3. In a bowl, mix the brown butter with the brown sugar and granulated sugar.
  4. Beat only until combined.
  5. Add the eggs one by one.
  6. Incorporate the vanilla and, if using, the pistachio paste.

Step 3: Add the dry ingredients

  1. Sift the flour together with the baking powder and salt.
  2. Add them gradually to the mixture.
  3. Do not overbeat.
  4. When you no longer see traces of flour, fold in the white chocolate and pistachios with a spatula.

Step 4: Bake

  1. Pour the mixture into the mold.
  2. Lightly smooth the surface.
  3. Bake for 28 to 32 minutes.
  4. The edges should look firm, but the center should still feel slightly soft when you move the pan.
  5. Do not overbake them; they will finish cooking with residual heat.

Step 5: Cool

  1. Let cool completely in the pan.
  2. Then unmold and cut into squares with a sharp knife.
  3. Clean the knife between each cut to get perfect edges.

Step 6: Decoration

  1. Using a spoon, drizzle white chocolate over the blondies.
  2. Sprinkle the chopped pistachios.
  3. Add a few flakes of sea salt.
  4. If you want a more special presentation, finish with some edible rose petals.
